Chef, Shawn McCoy, of The Swag Country Inn
Shawn began his appetite for working in the kitchen two years before
he came to work as a line and prep cook (at the age of 14) at The
Swag. Shawn was trained by The Swag's chef, Matthew Fray, who had
graduated from the same culinary school to which Shawn went from
The Swag – Walter’s State, in Sevierville, Tennessee. He won a scholarship
by cooking a dinner for the President and Culinary Board of the
Community College. While studying at Walter’s State, he was employed
as Personal Chef for Earl and Margit Worsham of Sevierville. In
this capacity, he was able to travel with them to Scandinavia, while
they were on holiday. He catered all of their entertaining – all
three meals for anywhere from 6 – 40 guests. After graduation from
culinary school he returned to his hometown in Waynesville. Shortly
after his homecoming, history repeated itself and he once again
returned to The Swag, as Managing Chef. |
Meals at The Swag are both social and delectable experiences. It is not
unusual for lasting friendships to be forged while guests feast on our
gourmet cuisine!
Breakfast specialties include our cider-simmered oatmeal, omelets made
to order, fragrant breads, fresh juices and an ever-changing variety of
pancakes, waffles, and pastries.
All luncheons are either in a brown bag (if you are leaving The Swag),
insulated thermal backpack for hiking, or a wooden picnic hamper if you
want to eat your picnic closer to the inn. We provide maps with hiking
destinations clearly marked.
At dinner, the mood is elegant, yet informal and relaxed. Our delicious
cuisine is served with flair in the candlelit dining room. Vegetarian
and special diet meals are available upon request.
We also have several special meals each week:
Sunday mornings, our guests enjoy a sumptuous brunch. In addition
to the usual fare, each week our chefs whip up something special -- the
food is fresh and seasonal.
Wednesday lunch is truly something special -- you are treated
to a gourmet meal served picnic-style atop Gooseberry Knob. Enjoy
our best culinary creations while gazing at panoramic mountain views.
Love the idea, but not up for a hike? We also provide shuttle transportation
between the main lodge and the picnic area.
On Thursdays, guests are treated to our fabulous BBQ Dinner,
including savory meats, fish, assorted salads, fragrant breads, sumptuous
desserts, and your beverage of choice. This bountiful buffet is served
on our porch, with magnificent mountain views as a backdrop.
And,
if you're really lucky, you'll be able to join us during berry season
-- you haven't lived until you've tasted our cobbler made from freshly-picked
mountain blueberries!
