The Swag’s new award-winning chef, Matthew Miner, brings to our Smoky Mountain hideaway more than twenty years of experience in the culinary field. He is originally from the Adirondacks, and has a culinary degree from the California Culinary Institute. His travels at an early age hooked him into a wander-lust interest in different cuisines around the world. He would acquire knowledge of the area and the availability of local ingredients, which fueled his desire to cook with the region in mind and to incorporate that into his culinary style. He calls himself “contemporary and perhaps a bit eclectic.”
His new challenge is to encompass Swag guests’ epicurean senses with a special Appalachian Mountain emphasis. Even though Matthew is not originally from the South, he says he “got here as fast as I could” with his wife and son. They are living in nearby Weaverville.
